Toddler Approved Healthy Muffins
I am always on the hunt for new and fun things for my little dude to try. He has recently become "picky" and isn't a fan of most foods, but anything that comes in muffin form he loves. I have scoured the internet and tweaked a few recipes with what I had on hand. I like to avoid processed sugar, and limit flour. He also has a egg and dairy allergy (although does okay with baked goods) but I avoid eggs and dairy if possible. I was able to get all the vegetables and fruit (aside from applesauce) from a local co-op for $4! All grown by local farmers. Have I mentioned how much I love Japan?
Diary free, egg free fruit and vegetable muffins
- 1.5 Tsp Baking Powder
- 1/2 Tsp Cinnamon
- 1 Cup Plain Flour (or Whole Wheat)
- 1/2 Cup Applesauce
- 1/3 Cup Grated Sweet Potato
- 1/3 Cup Grated Carrot
- 1/2 Cup Grated Pumpkin (I used Acorn Squash because it's what I had on hand)
- 1/2 Mashed Banana
- 1/4 Cup Coconut Oil (I was running low so I had to add some extra applesauce)
I adapted this recipe from from Mummy Musings
Preheat oven to 350 degrees. Mix dry ingredients together in a bowl, in a separate bowl combine grated Sweet Potato, Carrot and Pumpkin (or Squash). Add wet ingredients, while adding grated items last. Bake 15 minutes. Yields Approx 12 muffins.
